Santa, Joshua, and Coca-Cola


So we went to Walmart to get our free picture with Santa--can you tell it was free by the atrocious coke-case chair? Oh yeah and how about the cardboard cut-out of a fireplace in the background picking up the glare? Anyways it was a great picture of Joshua and I can't complain about that. Joshua wanted to go see him all on his own. Whitney was so excited to see Santa but when it was her turn to take her picture, she screamed her pants off. Oh well, better luck next year!

Whole Wheat Cranberry Pancakes

Just before Thanksgiving, Joshua's preschool teacher made this for snack. They're awesome!

Whole Wheat Cranberry Pancakes

Ingredients
1/2 cup flour
1/2 cup whole wheat flour
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
3/4 cup buttermilk
1/4 cup milk (plus 1 Tbsp if too thick)
1 egg separated
2 Tbsp butter, melted
Vegetable oil for the pan
1 cup fresh/frozen cranberries
2 Tbsp sugar

Directions:
1. In food processor or coarsely chop, then set aside the cranberries and 2 Tbsp sugar.
2. Mix dry ingredients
3. Combine buttermilk and milk; whisk in egg white
4. Mix melted butter and egg yolk
5. Comine all wet ingredients
6. Whisk whet ingredients into dry ingredients
7. Add cranberry/sugar mixture
8. Cook 2-3 minutes first side; flip; 1-2 minutes more (medium-high heat).
